The whole aging process occurs in the drum, since these doors are developed and smoothed. These limited edition wines mature slowly, developing rich and attractive aromas and wonderful flavor complexity.
In the mouth, perfectly calibrated, it is with fresh acidity and offers a lot of rich flavormelon, molasses, dried figs, sultanas and apricot jam. The finish is clean and shiny, with ripe pear and mint and very discreet citrus notes.
Perfect to be served with strong cheese like Stilton, but it also goes well with something rich and sweet like Catalan cream or dark chocolate mousse.
