Vinification

 

After crushing the grapes undergo a thermal shock, followed by stepping on standing for four hours in granite mills. The must is transferred to vats small capacity winemaking with temperature control. The grape varieties are vinified separately. Part of the wine underwent malolactic fermentation in barrels.
